Cowboy Chili

About the Recipe

Whether you cook this at home or at the campsite you will be happy with the delicious comfort food as it warms you from the inside out.

Ingredients

  • 1/2 pound ground beef, pork or turkey

  • 8 slices of pork or turkey bacon

  • 1 medium onion - chopped

  • 1 can kidney beans

  • 1 can white beans

  • 1 can baked beans

  • 1 package frozen corn (or canned if you like)

  • 1 cup BBQ sauce - your favorite brand

  • Minced garlic - to your liking

  • Cumin - to your liking

  • Salt and pepper - to your liking

  • Cheese to top - your favorite kind



OPTIONAL INGREDIENTS -

  • 1 can chopped tomatoes

  • 1 1/2 cups chopped hashbrown potatoes


OPTIONAL TOPPINGS -

  • Sour cream

  • Green onions

  • Hot sauce

  • Tortilla chips

Preparation

STOVETOP COOKING -


Brown sausage, onions and bacon. Once cooked - add all other ingredients - stirring often on medium heat for 30-45 minutes and serve.



CROCKPOT COOKING -


Brown sausage, onions and bacon. Once cooked - add all other ingredients - cook on Low for 6-7 hours - cook on High for 3 hours.



CAMPSITE COOKING -


I usually make at home and then put in a container and bring to the campsite so all you have to do is add to a pan and reheat. Yum! You can bring all items and assemble on site as well. When I do that I generally use Jimmy Dean pork sausage crumble (see below) and turkey bacon - both are precooked so I can easily just dump everything in the pan - heat, stir and enjoy.



CORNBREAD MUFFINS -


We love cornbread - and always enjoy it with our Cowboy Chili. Please make to your liking - when we are at the campsite we use our OMNIA Oven with the OMNIA Muffin pan and Pillsbury Cornbread (see below) .
